Cucumber Boats with North Sea Shrimp
Fresh, light, and full of flavor

These fresh cucumber boats are an elegant appetizer with a gentle bite and briny shrimp flavor. Easy to prepare, light to digest, and ideal as a cocktail snack, amuse-bouche, or part of a cold appetizer. Perfect for summer occasions or as refined finger food.
Ingredients
(yields 12 pieces)
2 cucumbers
300 grams peeled North Sea shrimp
3 tablespoons mayonnaise
1 teaspoon mustard
1 teaspoon ketchup
Splash of lemon juice
Pepper
Fresh dill or parsley (for garnishing)

Description
- Cut the cucumbers lengthwise in half.
- Remove the seed lines with a spoon. Carefully scoop out further until a nice, even groove is created in each half.
- In a bowl, mix the mayonnaise, mustard, ketchup, and a splash of lemon juice.
- Stir well and taste. Add a little pepper for extra zest if desired.
- Distribute the North Sea shrimp evenly over the cucumber grooves.
- Carefully spoon a little sauce over the shrimp.
- Cut each cucumber half into 6 pieces (for a total of 12 bites).
- Optionally garnish with finely chopped dill or parsley.
- Serve on a chilled platter with some lettuce underneath for presentation. Also delicious with a slice of lemon or an extra dollop of sauce beside each piece.
