This oven dish is a flavorful dish packed with vegetables, creamy mozzarella and juicy tropical shrimp. The soy sauce and ginger powder provide a subtle Asian twist. An easy and nutritious meal for weekdays.

Ingredients

(serves 3)

500 grams pasta of choice
200 grams tropical shrimp
1 package stir-fry vegetables (approximately 400 grams)
2 balls mozzarella
1 tablespoon soy sauce
1 teaspoon ginger powder
Olive oil for frying
Fresh parsley (for garnish)
Salt and pepper to taste

Description

  1. Cook the pasta according to the package instructions until al dente.
  2. Drain and let drain briefly.
  3. Heat a splash of olive oil in the pan.
  4. Add the stir-fry vegetables and stir-fry for 3 to 4 minutes over medium-high heat.
  5. Season with ginger powder and soy sauce.
  6. Lightly grease an oven dish.
  7. Distribute the cooked pasta over the bottom.
  8. Spoon the fried vegetables evenly over it.
  9. Slice the mozzarella and distribute over the dish.
  10. Place the tropical shrimp on top.
  11. Place the oven dish in a preheated oven at 180°C for 15 minutes, until the cheese has melted and the shrimp are nicely cooked.
  12. Sprinkle the dish with finely chopped fresh parsley just before serving.
  13. Serve warm, optionally with a fresh salad on the side.
