Poké Bowl with Shrimp and Salmon
Fresh, colorful, and full of flavor

This poké bowl is a feast on your plate. A combination of creamy sushi rice, tender salmon, briny North Sea shrimp, and crisp vegetables. Perfect as a light dinner or luxurious lunch.
Ingredients
(serves 2)
150 grams sushi rice
150 grams salmon (sashimi quality)
100 grams North Sea shrimp
80 grams edamame / soybeans
1 avocado
½ cucumber
1 tablespoon rice vinegar
1 tablespoon sugar
1 teaspoon sesame oil
2 teaspoons soy sauce
1 teaspoon sesame seeds
Lemon juice

Description
- Rinse the sushi rice and let it soak in cold water for 15 minutes.
- Rinse again and add 300 ml of water. Bring to a boil, lower the heat, and let the rice simmer gently for 10 to 15 minutes with the lid on the pan.
- Meanwhile, mix the rice vinegar and sugar. Add this to the cooked rice and stir well. Allow the rice to cool completely.
- Cut the salmon into cubes. In a small bowl, mix the sesame oil, rice vinegar, and soy sauce, and toss the salmon in it. Let it marinate briefly.
- Slice the avocado thinly (or shape it into a flower) and sprinkle with a little lemon juice to prevent discoloration. Use a vegetable peeler to cut the cucumber into ribbons and then into thin strips.
- Divide the cooled rice between two bowls. Place an avocado flower or half of the sliced avocado on each bowl. Distribute the marinated salmon, cucumber strips, soybeans, and North Sea shrimp over the bowls.
- Sprinkle with sesame seeds and serve immediately.
