Wraps with Shrimp, Pineapple and Crème Fraîche
Tropical flavors in no time

These fresh wraps combine juicy shrimp with sweet pineapple and crispy vegetables. Finished with a creamy lime crème fraîche. Perfect for a summer lunch or a light dinner.
Ingredients
(serves 4)
350 grams pineapple chunks
1 lime
300 grams shredded red cabbage
1 cucumber
6 tortilla wraps
125 grams crème fraîche
15 grams fresh cilantro
200 grams shrimp (North Sea shrimp, crayfish or tropical shrimp)
Salt and pepper

Description
- Clean the lime, grate the green zest and squeeze out the juice.
- Mix 3 tablespoons with the collected pineapple juice and lime juice through the red cabbage. Season with pepper and salt if desired.
- Halve the cucumber lengthwise, remove the seed cores with a teaspoon and cut the flesh into thin strips.
- Mix 1 teaspoon lime zest through the crème fraîche and season with freshly ground pepper.
- Chop the cilantro finely.
- Preheat the oven to 220°C.
- Place the tortillas on a baking sheet lined with parchment paper and warm them for 2 minutes in the oven.
- Top the warm tortillas with red cabbage, shrimp, cucumber, pineapple and cilantro.
- Spoon the lime crème fraîche over it.
- Roll up the tortillas, cut them diagonally in half and serve immediately.
